The Klein Karoo is slow to surrender its secrets. This is a sparse landscape of windswept plains and rugged hills, dry valleys and wide-open skies. Arrive in the noon shimmer of a summer’s day, or the biting cold of a winter evening, and you’ll understand why this stretch of land between the Swartberg and the Langeberg appears so uninhabited.

But stop. Look a little closer. Notice the tiny flowers bursting from succulents that have hoarded winter’s rain to sustain them through summer’s heat. The iridescent green leaves of a huilboerboon tree. Observe the jackal buzzard riding the thermals above, or the spoor left by springbok on the dusty trail. By the time sunset paints the sky in burnt orange and amber, you’ll be hopelessly in love.

At Aardvark Bioreserve, between Ladismith and Riversdale, such details are central to the experience of escape. Both a working farm and a conservation reserve, Aardvark stretches out across 5000ha of the Succulent Karoo, a biome known for its botanical richness and conservation value.

Today, the reserve blends high-end cottages with the opportunity to explore hand-carved trails across a landscape striking in its lonely beauty. While farm-style hospitality and luxury accommodation complete the picture, the Aardvark experience is shaped around a vision of restoring and protecting this remarkable corner of the Cape.

But it didn’t seem all that remarkable when Nico and Koemie Marais first arrived here in 2018. After decades abroad, working in finance across the United States and Europe, the family had long dreamt of returning to South Africa.

“We arrived here in the heat of January, as the Cape was coming out of a severe drought, and this was a very sad place,” remembers Nico. “There wasn’t a single bird. There were very few trees. It was quite depressing. But we were told, ‘You have no idea what this place can become.’”

That encouragement came from Koemie’s brother-in-law, David Zeller, a conservation expert who has worked across Africa and Asia, and who recognised the potential of this land. “We made an offer and it was accepted,” says Nico. “That’s where the journey started.”

Eight years on, it is a land transformed. The reserve has been fenced – an 18-month process – and a wildlife management plan is in place. Enormous investment in boreholes and reverse osmosis facilities has brought water to a thirsty land, while an ambitious tree-planting programme is beginning to bear fruit in the tell-tale sound of birdsong returning to the valleys.

Across the rocky hills, herds of zebra, springbok and gemsbok roam free. Set out late at night, under star-spangled skies, and you may even spot the reserve’s shy namesake.

But the real magic of Aardvark is not in its furry or feathered residents; it’s in the flora.

“When you start walking here, it’s a different world,” says Nico. “You can look at the landscape and think it’s just brown and dead, but this supposedly dry area is hiding extraordinary magic.”

Preserving this delicate environment and the rich floral diversity – through habitat protection, erosion control and wildlife management – is central to the conservation work on Aardvark.

Right from the beginning, Nico and Koemie knew that they wanted to share the remarkable landscapes of Aardvark Bioreserve. At first they welcomed friends and family, but slowly the hospitality offering on the property grew. Today, Aardvark Bioreserve provides a range of luxury stays aimed at families and couples looking to restore, reconnect and relish the deep quiet of the Klein Karoo.

The result is a collection of cottages and farmhouses that avoid the visual cliché of many wilderness lodges in favour of a lighter, more contemporary approach filled with personal touches, splashes of colour and carefully selected artworks.

“From the start, we promised ourselves that we were going to be authentic,” says Koemie. “We were just going to be ourselves. If you like it, you like it. So all the accommodation on Aardvark is one of kind, and it’s very personal.”

Berghuisie, set on a hill overlooking Miertjieskraal Dam, is the most romantic option, with a spacious master bedroom where the views wash in through floor-to-ceiling windows. Step outside and from the private wood-fired hot tub, splash pool and sun deck you can see forever.

Springbok Cottage is also aimed at couples and comes tucked into a quiet valley between the reserve and the working farm. Die Opstal is the largest space on offer for overnight guests, sleeping eight in a restored farmhouse where large groups can come together to spend days reconnecting in the wilderness. The sophisticated Manor House – the Marais’ private home – is expected to be added to the accommodation options in 2026, offering a thoroughly luxurious stay.

For families seeking laid-back spaces, Gemsbok Cottage and Zebra Cottage are the best bets, with contemporary country-style decor and spacious terraces ideal for long evenings by the fireside.

Or you could stoke the wood-fired hot tub for a session of stargazing. Both Zebra and Gemsbok are close to hiking and mountain-biking trails, so you can set off on foot or bike straight from your stoep to the trail.

And getting your feet dirty on the trail is one of the joys of a stay at Aardvark Bioreserve.

More than 100km of trails thread their way across the reserve, offering the chance to ride, run or hike through epic Karoo landscapes while keeping a keen eye out for the antelope – springbok, eland, gemsbok, and more – that thrive here.

The trails, laid out by Nico and acclaimed Stellenbosch-based trail builder Corrie Muller, range from accessible farm roads to challenging singletrack that brings a technical edge for experienced riders. Routes across the reserve are well mapped and marked, with GPS files available, and Specialized mountain bikes – electric and traditional – can be rented on the farm.

If you prefer a slower pace of exploration, specialist botanical walks can be arranged, particularly when the veld begins to flower after good winter rains. Safari-style nature drives in an open-sided Land Rover are also available for exploring more distant corners of the reserve.

If there’s a golden thread that binds Aardvark’s many attractions together, it’s a sense of authenticity. From the outdoor adventures to the considered luxury of the cottages, there is a lack of pretence and a thoughtful simplicity woven into every stay. That shows in the way food has become another thread in the Aardvark tapestry.

If you don’t want to lift a finger, wholesome premade meals – think chicken pie or fragrant bobotie – can be ordered in advance. Or guests can ask for the fridge to be stocked with organic produce, fresh vegetables and game meats from the farm, offering a true taste of the Karoo and the freedom to shape their own culinary experience, whether in the kitchen or around the braai.

The danger, as for any successful private hospitality project, is that growth could change the character of the place. Koemie is aware of that tension. There is demand for more services, more chefs, more structure. But Aardvark’s appeal lies largely in the fact that it has not become a standard lodge. For now, its direction is clear: small-scale, design-led, conservation-focused and personal. It is a place where hospitality is built around the land rather than imposed on it; where luxury comes through space, privacy, detail and the ability to slow down.

Aardvark began with a drought-stricken farm and no grand masterplan. In the years since, it has become a private reserve, a restoration project and a distinctive Karoo stay. Its success lies not in trying to compete with traditional safari lodges, but in offering something more specific: a carefully considered way to experience the Klein Karoo, shaped by personal passion and a growing commitment to conservation.

Due to its limited availability, BLOU is only accessible to guests who have previously stayed at Babylonstoren or The Newt. Through this, BLOU remains intentionally under the radar, a secluded retreat for those seeking both rest and reconnection.

For anyone familiar with the Babylonstoren world, this coastal stay offers something beautifully complementary: a place to exhale and reset in blue. Sea, sky and everything in between.

Winter casts a magical charm over Bonne Esperance Boutique Guest House, a landmark Victorian villa where guests can expect a peaceful and cosy atmosphere. It’s a space where heritage elegance meets modern comfort, says owner Annemien Kotze.

“For me, the most beautiful time in Graaff-Reinet is when the vine leaves on our pergola change colour,” says Kristal Meintjies, a full-time server at the Drostdy Hotel since 2021. She knows what she is talking about. In autumn, the light is soft and the days warm but not too hot; just right for wandering around this historic Karoo town.

The Drostdy Hotel puts visitors at the heart of it. From its location on Church Street, it’s a short stroll to the grand Dutch Reformed church, built from grey sandstone in Victorian Gothic style. The magnificently renovated hotel faces the old parsonage from 1812, which today houses the Graaff-Reinet Museum. On the corner opposite the hotel sits Karoo Origins, a world-class fossil centre due to open in April 2025. Cradock Street, one road over, is the street with the most national monuments in the country, while nearby Bourke and Somerset streets are lined with shops that sell local treasures such as leather goods, mohair products, antiques and jewellery.

The hotel is a jewel in its own right and has been carefully restored to reflect its rich history. Built in 1805 as a residence for the landdrost, the magistrate for the region, it eventually entered into private hands before becoming a hotel in 1878. In the Victorian era, additions changed the facade, but the original Cape Dutch gable and thatched roof were reinstated under Historical Homes SA in the 1970s and the Drostdy Hotel was declared a National Monument in 1987.

Its current incarnation as five-star country hotel came about through the Rupert family’s ties with the SA College for Tourism (SACT) and the Peace Parks Foundation. In 2001, Dr Anton Rupert, then chairman of Peace Parks, established the college to train young people from rural communities for the tourism industry. With limited employment opportunities in these wild landscapes, careers in ecotourism offer the best chance at prosperity.

SACT therefore trains young adults from rural areas in South Africa, Botswana, Mozambique and Zimbabwe to work as trackers, front-of-house staff, assistant chefs, table servers, housekeepers and wellness therapists.

But, explains Mariette Ferreira, SACT’s executive director, new hospitality graduates initially faced a substantial hurdle: they didn’t have the work experience that luxury lodges demand. That is when an innovative partnership came about. In 2012, the Rupert Family Foundation acquired the hotel and donated it to SACT so that students could gain hands-on experience.

A two-year and R100-million renovation turned the Drostdy Hotel into a 48-room luxury establishment with a fine dining restaurant, its own wine shop and art gallery, an Africology Spa and three swimming pools. The hotel reopened in 2014 with interiors by Stephen Falcke that create a luxurious feel while staying true to the hotel’s Karoo character.

In the main building, a cigar lounge, formal lounge, ladies’ bar and vinotheque match the elegance of the Old Drostdy’s sash windows and yellowwood floors. Historical photos, botanical prints and antelope horns adorn the walls and plush leather couches invite guests to linger. Most of the rooms are in the former slave cottages that line Stretch’s Court, where trees shade a pedestrian avenue running between the white cottages with their colourful doors and shutters.

The hotel complex also includes Kromm’s Court, which has 10 rooms, the four-bedroom Ferreira House and the self-catering Kleinje Ferreira House. Courtyards and walkways with water features, benches and sculptures connect the different areas to create a village feel.

Even more beautiful than the Drostdy’s rooms and landscaped complex is the way the hotel opens up opportunities for marginalised young people. Students at the college shadow experienced staff to learn the finer points of hospitality from day one, rotating across various departments before specialising in their second semester.

Krystal, a 2018 SACT trainee, says she always knew she “wanted to be part of hospitality” and has found her niche in the hotel’s food and beverage department.

Although she hails from Graaff-Reinet, most of the students come from remote settlements bordering protected areas. They are young adults who have never been to a restaurant but will be expected to provide sterling service to sophisticated travellers. At the Drostdy Hotel they develop the skills and insights to delight discriminating guests.

Each year, the hotel offers 30 internships to new graduates and its profits are ploughed back into the college’s training programme. “It is the most meaningful work I’ve done. You truly impact other people’s lives,” says the hotel’s general manager, Tebello Polisane-Casper. Since 2001, 1 418 students have been trained for careers in tourism.

Guests may come face to face with an example of the programme’s success when they check in. Monique Soulse, a 2015 SACT graduate, was among the first trainees to intern at the Drostdy Hotel. She was initially hired as a receptionist but worked her way up to front-of-house manager. Since the start of 2025, she is the front office trainer at the SA College for Tourism.

There’s no doubt that a stay at the Drostdy Hotel is a feel-good experience, which is only enhanced by what the hotel offers. Chef George Jardine, culinary director of Valor Hospitality, has worked with the Drosty’s executive chef, Vivian Solomon, to reimagine the restaurant menu. It now showcases the tastes of the Karoo in dishes like springbok carpaccio served with spekboom aioli and decadent milk-tart crème brûlée. A visit to the spa is sure to set the tone for relaxation, while the wine shop offers personalised wine tastings.

A trip to Graaff-Reinet wouldn’t be complete without an outing to the Valley of Desolation. Karoo Connections offers guided tours to Camdeboo National Park, a name that means ‘green hollow’. It is a reference to the verdant valleys fed by the Sundays River, making this area a place of hope for hunter-gatherers and early farmers. Thanks to the Drostdy Hotel, this corner of South Africa is still a spot where promise is nurtured.

NETHERLANDS: Rosewood Amsterdam

Rosewood Hotels & Resorts makes its debut in the Netherlands in June 2025, with the opening of Rosewood Amsterdam. Housed in the former Palace of Justice, a 17th-century landmark set on the banks of the stately Prinsengracht, the new hotel marks the city’s final permitted hotel development within a historic monument.

The restoration and transformation of the Palace of Justice – built in 1665 – was a decade-long process driven by Studio Piet Boon. Transforming courtrooms and cell blocks into elegant design-driven suites and public spaces was a mammoth undertaking, but the Studio deftly blended the heritage of the space with a sense of contemporary sophistication. Dutch craftsmanship comes to the fore in the 134 rooms and suites, while public spaces celebrate the Dutch concept of gezelligheid, which South African travellers will certainly appreciate!

“We wanted every space to reflect Amsterdam’s soul: rich in history, effortlessly elegant and alive with charm,” explains founder and owner Piet Boon. “Each detail invites guests to feel at home, immersed in a journey that flows from the timeless beauty of the 17th century to a fresh, contemporary Dutch design perspective.

”That aesthetic continues in the three restaurants and bars, while signature touches abound. Look forward to sipping spirits from the in-house distillery or touring the famous canal district, a Unesco World Heritage Site, on the hotel’s exclusive Salon Boat. 

SCOTLAND: Ardbeg House

Smoke. Salt. Iodine. Islay whiskies are certainly not for everyone, but … if you know, you know. For ardent whisky lovers a pilgrimage to Islay is a trip for the bucket list, whether you fly in from Glasgow or take the (more scenic) ferry from Kennacraig on the Kintyre Peninsula to Port Ellen. This charming seaside village will also soon be home to the most exciting new hotel on the island, as Ardbeg House throws open its doors to guests in September 2025. 

Ardbeg House takes over what was once the historic Islay Hotel, with Russell Sage Studio – the creative force behind the striking reinvention of Glenmorangie in Speyside – driving a floor-to-ceiling rethink of the establishment. Out go the staid British furnishings, replaced by a ‘distinctly Ardbeggian’ flourish of texture and a dash of humour across the 12 rooms and suites. 

Here you’ll find a dark and moody decor that matches the malts and delves into the history of this remarkable distillery. Downstairs the Signature Restaurant will showcase Scottish produce and culinary traditions, while The Islay Bar will offer a complete range of Islay malts, including a signature Ardbeg release only available here. Guests will also enjoy a complimentary tour of the distillery that clings to the island’s wild southern coastline.

ITALY: Splendido

It’s not hard to find a wonderful hotel on the Italian Riviera that stretches east of Genoa, but perhaps few can compare with Splendido, a Belmond hotel that clings to the forested hills above Portofino. With a guest list that included Richard Burton and Elizabeth Taylor, Splendido has epitomised the golden era of la dolce vita for decades, and a process of constant evolution ensures this magnificent property is looking as vital as ever. 

This year marks the third, and perhaps most exciting, stage in an inspired renovation of what was once a 16th-century Benedictine monastery. While 2023 revealed a transformation of the famous saltwater swimming pool terrace overlooking Ligurian bay, and 2024 saw the signature Baronessa Suite and Splendido Grill welcome guests, 2025 is a bellwether for the fortunes of this famous hotel. 

With a revamp led by Martin Brudnizki Design Studio, guests will arrive at a reimagined central building complete with a restyled cocktail bar – perfect for that all-but-compulsory Aperol Spritz – coffee bar, lounge and breakfast room. The new wellness space is another highlight, with the Dior Spa promising four treatment cabins and a dedicated relaxation space on an exclusive roof terrace.

UNITED KINGDOM: Britannic Explorer

With the historic Venice-Simplon Orient Express in its stable, Belmond certainly knows a thing or two about luxury on the rails. And in mid-2025 the company brings that expertise to the first luxury sleeper train to ride the rails of England and Wales.

Look forward to multi-day itineraries to discover the dramatic coastline of Cornwall or the bucolic countryside of Wales and the Lake District. Happily, these itineraries can be easily combined into a week-long sojourn exploring some of Britain’s best scenery. That landscape was the creative spark for the onboard experience too, created by design studio Albion Nord.

Expect a contemporary take on English style and design in the Explorer’s three grand suites and 15 suites, as well as the convivial bar, lounge and restaurant areas. Cuisine is by restaurateur Simon Rogan, one of the pioneers of Britain’s farm-to-fork movement. If you love Rovos Rail, you’ll quickly fall in love with the Britannic Explorer.

MALTA: Romègas

For savvy travellers in search of a dose of European history and Mediterranean charm but away from the crowds of the usual hotspots, Malta is having a moment. And while the coastline and historic villages are all worth exploring, it’s in the capital Valletta that you’ll want to base yourself to soak up the energy of the island.

After a five-year restoration, a 500-year-old palazzo has been reinvented as the city’s most exciting new boutique hotel. With the aim of both reflecting the Maltese heritage of the palazzo and infusing a more modern aesthetic into the space, local design studio Camilleri Paris Mode meticulously preserved and protected the stonework, façade and historic carvings, providing the perfect canvas for a space that also exhibits works by established and emerging artists from the island.

Guests can be assured of personal service, as Romègas – named for a former resident who was once Grand Master of Malta – offers only 23 rooms and suites.

FRANCE: Château de la Commaraine

With a history stretching back to 1112, when it was built as a fortified manor, Château de la Commaraine has been entirely reimagined over the past four years into an unforgettable five-star hotel in the heart of Burgundy. It will be ready to welcome guests for the first time in late 2025.

Set in the heart of the village of Pommard, a short drive from Beaune, Château de la Commaraine will offer 37 rooms for guests to discover an expansive estate immersed in the vines of this seminal wine-growing region. Though the estate’s heritage is rich and varied, the renovation instils a distinct sense of contemporary sophistication. Think screed walls, high ceilings and thoroughly modern furnishings in a neutral colour palette – together they bring the vibrancy of the vineyards to life. And while Burgundy is on the doorstep, you may be tempted to stay in.

Château de la Commaraine will offer two restaurants helmed by acclaimed chef Christophe Raoux, while also welcoming guests to taste wines from its own cellar.

From the restaurant terrace you’ll look across to the slopes of the Simonsberg and the manicured vineyards and olive groves of Tokara estate. While justifiably famous for both its wine and extra-virgin olive oils – not to mention a superb XO brandy! – Tokara is today a multi-faceted estate where you can sip on Sauvignon Blanc, wander through the gardens, admire the outdoor sculpture park and then take your seat at the table to let chef Carolize Coetzee impress you with her seasonal menu of inspired dining.

Travelling with kids? The Tokara Deli is a better bet, with wide lawns and a fun play area. Certainly don’t leave without a wander through Tokara’s intimate art gallery. You’ll find art in abundance across the Stellenbosch Winelands.

Art in Town

The Dylan Lewis Sculpture Garden showcases more than 60 works from this acclaimed sculptor in a 7ha landscaped garden framed by mountain peaks. Further down the R44, a trio of exhibition spaces on Cavalli Estate exhibits a private collection of South African works and a roster of contemporary exhibitions. Down the Annandale Road, more than 1000 works from the Spier Private Collection are exhibited in the farm’s historic Cape Dutch buildings and the public spaces of the Spier Hotel, along with dozens of outdoor sculptures scattered across the manicured estate.

And, as you head back into town, make time for a visit to the wonderful Rupert Museum, which showcases modern South African art across both permanent and temporary exhibitions.

Tasting Notes

As this is South Africa’s most famous wine region, one can be forgiven for being slightly nervous about selecting white wine highlights here. Chardonnay, Sauvignon Blanc, Chenin Blanc, Cap Classique … Stellenbosch produces them all, and brilliantly. One reason for this is the wine culture that developed from the day Simon van der Stel approved a settlement here in 1679. Varying geography, including mountains, valleys, plains and diverse soil types, also allows Stellenbosch’s wine visionaries to identify ideal patches of earth for planting cultivars favouring the relevant terroir pockets. The results are stunning.

Kleine Zalze

For Chenin Blanc, Kleine Zalze Wines is my place to visit. Four are made here: three under the Kleine Zalze label and one in its irreverent Project Z range, a platform that allows the winemakers to express themselves in off-kilter, adventurous ways.

Lanzerac

Lanzerac, at the foot of the Jonkershoek Valley, is a well-trodden path of Stellenbosch wine history, with many highlights in its past. The first Pinotage wine was made under the Lanzerac label, vintage 1959. But the theme here is white wines and, when it comes to classics, no variety does it better for me than Chardonnay. Lanzerac’s Mrs English Chardonnay again shows how seamlessly Burgundy’s great white grape has found a home in South Africa, and most noticeably Stellenbosch. It is made from a single vineyard in the Jonkershoek Valley, one of the wettest spots in the whole country and where the vines for Mrs English grow at 375 m above sea level.

Delaire Graff Estate

High on the Helshoogte Pass glitters Delaire Graff, a sumptuous, modern hospitality and wine destination in every sense of the word. It’s easy to be side-tracked by art and jewellery, by landscaping of immaculate detail and by wondrous dining and views. Yet the wines do justice to all this, and none better than the Delaire Graff White Reserve 2022. Enjoy a glass or two, chilled, while gazing at the blue-and-russet mountains of the Banhoek Valley, with a song in the heart and poetry in the head.
